11/8/2003 Applesauce From Mammy, Betty Crocker's Cookbook 4 apples, peeled, cored, and cut into fourths 1/2 c water 1/4 c packed brown sugar or 3 to 4 tbsp granulated sugar 1/4 tsp ground cinnamon 1/8 tsp ground nutmeg Heat apples and water to boiling over medium heat. Reduce heat. Simmer uncovered 5 to 10 minutes, stirring occasionally to break up apples until tender. Stir in remaining ingredients. Heat to boiling. Cover and cook on LOW for 8 to 10 hours. Serve warm, if desired. 10/28/2011 George's version 8 large apples 1/2-1 c water (doesn't really matter) optional: raisins cinnamon nutmeg mulling spices Core, peel, and cut apples into chunks. Bring to a boil in a dutch oven or large pot, then cover and lower heat. Stir every 10 minutes, until the apples feel like they're softened. Remove from heat. When cool enough to handle, run apples through food mill, or mash by hand. (Our rice cooker bowl was the perfect size.) (Try adding raisins after applesauce is mashed, but while it's still hot.)
