NOT BAD FOR MY FIRST FISS Baked Salmon Steaks From http://www.cooks.com/rec/doc/0,1817,151186-232207,00.html 1/31/2005 < 1 lb salmon steak 2 tbsp butter 2 tbsp flour 1 c milk salt/pepper to taste 1/4 c fresh squeezed lemon juice 1 tbsp chopped chives or onion greens (substituted 1/2 c chopped onions 12/30/2006 - add them to the sauce while melting the butter, before the milk is added) 1/4 c white wine paprika butter Place salmon in a buttered baking dish. In a small-medium saucepan, melt 2 tbsp butter on med. Stir in flour, and salt/pepper. Gradually add milk. Stir and cook until thickened. Then add lemon juice, chives, and wine. Pour sauce over steaks, dot with butter. Sprinkle with paprika. Bake at 400 degrees (375 our oven) for 25-30 minutes (20 minutes our oven was plenty). notes: for tilapia: Bake at 350° for 15 minutes, until tilapia flakes easily with fork.
