Brown Rice with Spinach, Tomatoes, and Feta Invented by george with help from internet. 10/21/2011 1 c brown rice (cook for 40 minutes in ricemaker with 2 1/4 c water) olive oil 1/2 onion, diced 2 cloves garlic, minced, in 2 tsp olive oil 15 oz tomatoes (fresh or canned) 1 tsp sea salt fresh ground pepper to taste 1 tsp sugar 1 tbsp vinegar 1/2 tbsp lime juice 1/4 tsp dill 1/2 - 1 tsp tobasco 15? oz spinach 1 box feta (optional) OR peas instead of spinach dried cranberries or fruit instead of sugar sliced almonds Use large metal bowl to combine everything. When rice is nearly done, sautee onions in a pan on the stove until soft (3-5 minutes), with a pinch of salt and pepper. Add garlic and olive oil mixture to center of pan, and heat until fragrant, about 15-30 seconds. Meanwhile, in large bowl, combine tomatoes, salt, pepper, sugar, vinegar, lime juice, dill, and tobasco. Stir to combine. When onions are done, immediately add to large bowl, stir to combine. Add spinach to top of bowl, but do not mix yet. When the rice is finish, dump it over the spinach to wilt it slightly, then stir everything together. Serve, passing feta around separately.
