1/14/2010 George's Chocolate Chip Cookies makes about 40 cookies DRY: 15 oz (3 c) flour 1 3/4 tsp baking soda 1 tsp salt WET: 8 oz (1 c) unsalted butter 11 oz (1 1/2 c packed) brown sugar 1 1/2 tsp vanilla 2 eggs (scrub eggs in warm soapy water before breaking if you're going to be eating dough) 13.5 oz (2 c) tollhouse semisweet chocolate chips OR 10 oz reeces pieces + 4 oz tollhouse semisweet chocolate chips OR 13 oz ghiradelli 60% dark chocolate chips preheat oven to 400 1. Whisk together dry ingredients in medium prep bowl. 2. Beat butter, sugar, and vanilla with a mixer until well blended. Beat in eggs, mixing well. 3. Add in half of flour mixture, mix together. Add rest of flour mixture, mix together just until barely combined. 4. Add in candy, mix together just until distributed. 5. Bake until edges of cookies are brown but an area about 1 inch wide in teh center is still pale, 6 to 7 minutes. 6. Let cookies cool on pan 3 minutes, then transfer to paper towels. (My smaller 60 count scoop, about a tbsp, yields about 40 cookies.)
