7/31/2005 Pork Tenderloin From Judy Lee Pork Tenderloin Rock salt Olive Oil Garlic, cut into slivers Rosemary Thyme (optional) Pepper Preheat oven to 375. Rub pork with salt. Brush with oil. Cut slits into the pork, and put a sliver of garlic and a sliver of rosemary into each one. As a guideline, slits should be about one inch apart. Optional - sprinkle some extra rosemary and thyme on top. Optional - wrap tenderloin in aluminum foil. Pull open foil for last 10 minutes to brown. Heat oven to 375. Bake for about 30 minutes (20 minutes per pound), or until meat thermometer reaches 160, and pork is done in the middle.
