Puerco Pibil From "Once Upon a Time in Mexico" 4/4/2010 Chop in spice grinder: 3-5 tbsp annato seeds 1.5 tbsp peppercorns 2 tsp cumin seeds 8 whole allspice 1/2 tsp whole cloves Blend until smooth in blender: Spice mixture from above 1/2 c orange juice Habanero peppers 1/2 c white vinegar 2 tbsp salt 8 cloves peeled crushed garlic 3/4 c lemon juice (juice from 5 lemons) splash of tequila 4-5 lb pork butt, cut into 2 inch chunks DIRECTIONS: In bowl, mix marinade with pork, stir to cover meat with marinade. Cover it tightly in foil (after wrapping it in banana leaves), and bake for 4 hours at 325 degrees. Serve over white or spanish rice, or mashed potatoes, or on buns with cheese.
