Rice and Tomatoes 7/7/2005, modified 1/30/2006 George 1 3/4 c water 1 c rice (Cook rice in rice maker as normal. Allow 20 minutes.) ----- 1 box broccoli, small pieces, steam normally, allow 8 minutes. ----- 1 1/2 c chicken broth, made with 1/2 boullion cube in microwave, allow 4 minutes. ----- 1/2 sweet onion, chopped 2-3 cloves garlic, minced 14 oz canned contadina tomatoes stewed with herbs pepper 1 tbsp olive oil basil optional: carrots celery peas corn Put oil in pan. Saute onion and garlic until soft, but a little bit of crunch in this recipe is fantastic. Add prepared chicken broth and tomatoes to pan. Add pepper and basil. When rice and broccoli are ready, combine all in a large bowl and stir. 3 LARGE servings.
