Roasted Red Peppers 8/20/2011 Based on Cooks illustrated http://www.cooksillustrated.com/recipes/detail.asp?docid=6166 Remove the top and bottom of the red pepper - remove green stem, and set aside. Remove the seed pod by pulling it out from the top. Cut a slit down the side of the pepper, and open it flat, using a knife and slits to ease it flat. Cut the ribs out of the pepper. Place all parts of the pepper skin up on a baking sheet, and broil on high for about five minutes, until the skin is black and blistered. Remove from the oven, and place in a glass bowl covered with saran wrap, or a brown paper bag for 15 minutes, to loosen the skin and let them cool. Peel off the skin.
