10/25/2005 from benoit Spinach & Feta pasta You need: an onion, a couple cloves of garlic, 1 lb frozen spinach, ~1/5 - 1/4 lb feta, <<1 tsp nutmeg, black pepper, ~1/4 cup dried dillweed, ~1 tbl pine nuts. Roast the pine nuts by dumping them into a pan and stirring them almost constantly until they brown. Immediately take them out of the pan and into a bowl. Chop & saute the onion for 3-5 minutes, dump in the garlic & saute a minute or two longer, dump in the spinach and maybe a few drops of water to help it thaw faster. Stir often to make sure it thaws evenly. When it's heated, add the spices and pine nuts.
