Spinach Salad

Makes 4 large or 8 small salads

DRESSING
2 large garlic cloves, minced
1 tsp dijon mustard
2 tsp honey
2 tbsp vinegar
1/4 tsp salt
1/2 tsp tobasco
pepper
4 tbsp olive oil

1/8 c thinly sliced onion
1/4 c diced tomato

1 lb spinach & arugula (about 12 oz baby leaf spinach to 4 oz arugula)

feta or parmesan cheese 

Combine all ingredients for dressing except oil in 1 quart bowl.  Whisk together.  Add oil slowly, while whisking.

If possible, combine DRESSING, onion, tomato, and greens and toss.  If not, add the tomato and onion to the DRESSING and mix, serve with a large spoon over the greens.  Add cheese.
