Rather desserty. TOPPING 1 cup light brown sugar 1/2 cup all-purpose flour 1/3 cup butter 1 cup chopped pecans In a small bowl, mix together brown sugar and flour. Cut in butter until mixture is crumbly, then stir in pecans. MASHED SWEET POTATOES 6 lbs cooked and mashed sweet potatoes (boil sweet potatoes whole for 45 minutes, let cool 1 hour, then peel their skins off) Note that you can't fit more than 6 lbs potatoes into one 9x13 pan. 1/2 cup melted salted butter 1/3 cup milk 1 cup white sugar (i used 1/2 c brown sugar and 1/2 c maple syrup) 1 teaspoon vanilla extract 2 eggs, beaten Combine all of the ingredients for MASHED SWEET POTATOES and mash the potatoes with a hand mixer or a potato masher. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. (I used cooking spray.) Spread MASHED SWEET POTATOES into the prepared baking dish. Cover top of sweet potatoes with TOPPING, and pat down to form an even surface. Bake for 45 minutes, or until golden brown. Can cook for as little as 30 minutes with a thinner layer of potatoes.
