9/6/2004 Sweet Potato Chips Had these at a restaurant in Denton, DE Some of the recipe is from http://vegweb.com/food/snacks/snack12.shtml sweet potatoes vegetable cooking spray optional: sour cream applesauce honey Heat oven to 350. Peel sweet potatoes, and make fat 1/8" slices using julienne (rippled) knife. Cover a tray with foil, and spray lightly with vegetable spray. Lay sweet potato chips on the foil (suggested that you rub each one slightly in the vegetable spray), then lightly spray the tops with vegetable spray. Bake for 20 minutes, turn, then bake for another 10 minutes. Suggestion: toss slices in a bowl of warmed up honey or maple syrup before baking. Note, sugar makes them sticky. Suggestion: serve with applesauce and sour cream dip (mix 1:1). Don't need much of this per potato. Suggestion: sprinkle with cinnamon and brown sugar. Note: yam did *NOT* work. It had the consistency of a dried apple, but that could have been the honey coating that caused it. Worked great with a real sweet potato.
