11/27/2005 Sweet Potato Hash Browns George adapted from various recipes on the web 3 med sweet potatoes 1/2 med-small onion 2 tbsp brown sugar 1/4 tsp cinnamon 3 tbsp butter ham garlic? bacon I did: sauteed onion in 2 tbsp butter until soft on med heat added sweet potatoes to pan, mixed with onions and another tbsp of butter until coated added brown sugar and sprinkled with cinnamon, added ham, then mixed it all up once mixed, form into 4 patties cook for 10-15 minutes or until crispy #1, from http://www.mrbreakfast.com/superdisplay.asp?recipeid=787 Hash Browns - Sweet Potato (4 servings) Printable Version 1 pound sweet potatoes (roughly 3 medium spuds) -- peeled and grated 1/4 pound diced bacon 1/2 cup chopped onions 1/2 tablespoon chopped garlic Salt and pepper to taste In a large skillet, fry the bacon until crispy, about 8 minutes. In the same pan, add the onions. Season with salt and pepper. Saute the onions until soft, about 2 minutes. Then add the garlic and sweet potatoes. Saute for about 10 to 15 minutes. Form the mixture into 8 small patties. Warm 1/8 inch of oil in a cash iron skillet over medium-high heat. Place the patties in the skillet, frying in two batches if necessary. Fry the patties for 3 to 4 minutes or until they are browned and crispy. Drain and serve hot.
